One of the most beautiful settings in the Languedoc, the land round Montpeyroux is outstanding for the diversity of its soil, its unspoilt wild countryside and its splendid climate. Facing south-east in the foothills of the Cevennes, below the Larzac highlands, the vineyards are protected from cold winds and frost by Mont Baudile (altitude 848 m/2750 ft) and the Seranne massif. There are three distinct geological types in the Mountpeyroux area :

The high land : on the high slopes of a cryoclastic limestone gorge which climbs to some 300 m (975 ft). The gorge was formed millennia ago when a lake, which was itself formed after a subterranean eruption, receded.

The terraces : individual terraced land parcels consisting of fine grained lacustrine silt deposits situated on 150-200m high hills (490-650 ft) and enclosed by ancient dry stone walls.

The qualities of different grapes vary enormously depending on their age, where they are planted and the type of soil. Our best Carignan vines, for example, are 35-40 years old. We aim to ensure that all our wines are of the best possible quality. That is why we analyse each land parcel to ensure each produces the best possible results : vines are planted where each variety will flourish best and are cared for in ways best adapted to their situation. The quantity of grapes produced is controlled at optimal levels –in some cases the number of bunches is drastically reduced to concentrate the maximum taste and quality in those remaining.

Safeguarding the right ecological balance is vital if we are to care for our environment; for example, we use organic fertilisers and the very minimum amount of insecticides. And all this means we can pick and choose complementary grapes from different parts of the area, vinify them separately in small quantities and adapt our production methods accordingly; some wine will be matured in oak barrels, some in vats, to be blended or not depending on the type and quality of the wine we want to produce.
